Shannon
Princess's chef, Olivia, grew up in Ireland... a culture rich with food
and hospitality. After college she attended Ballymaloe Culinary School,
and also trained internationally by working all over the world in
hotels, restaurants, and yachts. An avid forager, Olivia often musters
guests and crew together to head off for an afternoon's
picking of
wild fruits, herbs, and heirloom vegetables. Olivia is the first to
acknowledge what a great privilege it is as a chef to continuously use
the freshest and highest quality ingredients sourced on a daily basis.
Onboard
SHANNON PRINCESS you will be treated to a unique
transient
taste of Ireland. Menus, food, and service are a tribute to Ireland’s
abundant natural ingredients and artesian producers. Prepare to be
seduced by only the finest and freshest ingredients, gathered at farm
shops and country markets along the Shannon and, of course, from the
sea. Cheeses and organic ingredients are chosen from dedicated crafts
people with a true love of food. The handmade farmhouse cheeses are
unique to each cheesemaker's farm and milk herd.
You will be
treated to elegant dishes, sublime flavours, and "must-have" desserts.
Start each day with your Wellness Style Breakfast, complemented by
freshly baked pastries and breads from the galley. Each meal is an
occasion; served on fine porcelains, with delicate Irish crystal and
crisp linens. The SHANNON PRINCESS enjoys the pleasure of sharing the
fruits of their search for great wines. Wines served are both New and
Old World wines, perfect to complement your gourment dining.
